Assiniboine’s Baking Foundations program on deck for September 2021 in Brandon

Assiniboine Community College is bringing a special offering of the one-year Baking Foundations certificate program to its Manitoba Institute of Culinary Arts (MICA) in Brandon, beginning in September 2021.

“The program prepares students for some of the most creative jobs available in the hospitality industry through hands-on learning of baking techniques from preparation through to presentation,” said Tim Hore, Dean, School of Agriculture and Environment. “Graduates will leave the program with a solid understanding of industry-standard bakeshop skills.”

Assiniboine has delivered its Baking Foundations program in Winnipeg for the past several years. That program welcomes students from around the globe each year.

“The program will cover classic baking concepts and delve into some advanced techniques,” said Dr. Ryan Whibbs, Academic Chair of MICA and Field to Fork Initiatives. “It’s a lively industry and our training matches that with a dynamic curriculum that touches on industry trends.”

Graduates of this program will have the opportunity to build careers with patisseries, bake shops, hotel and restaurant kitchens and catering companies.

Chef Joanne Johnston RSE will be the primary instructor for this cohort. Chef Johnston has a baking certificate and Red Seal cooking certification, and has been instructing at Assiniboine for 19 years teaching patisserie and cooking principles.
